The person behind Peony

A culinary path across three countries.

Born in South Korea, raised in Argentina and now cooking in Georgia, Hak Sung Kim brings a genuinely international perspective to brunch.

Before Peony, Kim built experience across gastronomy as a chef, culinary instructor and entrepreneur. A visit to a friend in Georgia started the idea that would become a restaurant. With business partner and childhood friend Kim Joon Dong, he planned the concept in detail and opened Brunch at Peony in August 2022.

The goal was precise: create something distinctive in a competitive brunch landscape without losing the comfort people love. European-influenced plates, American brunch forms, carefully planned service and a warm boutique room became the Peony formula.

Chef Kim openly credits his family, partner, staff and customers. His wife, Hyun Sook Jin, is a professional barista in the business and encouraged his formal culinary career.
